Janine Bakery and Restaurant Opens Its Doors: Two Concepts, One Soul

Amsterdam, [December] – In the heart of Amsterdam, Janine opens its doors: a place where the influences of Italian cuisine meet the free, spontaneous dining culture of San Francisco – a city where sourdough, coffee, and pizza are part of the everyday life. Janine is not an Italian restaurant. Instead of focusing on “authenticity” or “Neapolitan pizza,” Janine brings a unique marriage of flavors that have emerged from combining Italian cuisine with the American West Coast atmosphere, where flavors evolved and culinary traditions were embraced, adapted, and reinterpreted. At Janine, everything begins with craftsmanship and dough, anchored by an authentic Napoli recipe that forms the foundation of our signature pizza sourdough.

The open wood-fired oven serves as the restaurant’s beating heart, infusing both pizzas and dishes like wood-roasted bone marrow, steak baked in the wood-fired oven, and wood-fired lasagna with a distinct depth of flavor. The team collaborates closely with local farmers, growers, and Dutch flour producers to ensure only the highest-quality ingredients make their way into the kitchen. Here you’ll find freshly baked bread, handmade pastries in surprising shapes, our signature pizzafoglios for lunch, beverages from the Drinkfabriek and specialty coffee made with LOT61’s blend, crafted with expertise and the finest ingredients. Enjoy the special blend of Brazilian and Guatemalan beans, delivering a bold, rich espresso with great balance, perfect as an espresso or in other drinks. For those looking for a quick yet flavorful lunch during a busy workday. The signature Pizza Portafoglio are authentic, folded pizzas – ideal for a tasty break, quickly fuelling you for the rest of your day. The bakery also offers a curated selection of fresh bread and homemade products to take home.

And when the bakery is closed, you’ll see our familiar saying, “the dough is resting,” inviting guests to step inside the restaurant instead and experience the warmth, creativity, and flavor that define Janine.

Janine Bakery opens on Monday December 15th, 2025, daily open from 08:00 to 16:00.

Janine Restaurant opens from Monday January 26th, 2026, Monday to Saturday, open from 12:00 to 22:00.
